I absolutely love creating hand crafted menus and wine pairing dinners. I think this might be my favorite part of my job. Getting to provide something truly unique to showcase paso's rich wines but farming community as well. It never fails I end the evening with new friends!

First Course:

Shared Charcuterie Board. 

A Selection of fine cheese and meats, Prosciutto wrapped melon,

dried fruits and chevee goat cheese with an apricot jam. 

Paired with Rava Sparkling Solstice

Second Course:

Roasted Cauliflower Soup

Roasted Cauliflower, white onion, garlic, thyme with turmeric, and nutmeg. Topped with Lardons, Herbed goat cheese and smoked salt.

Paired with Willow Creek Wine Collective, Rococo wines. 2021 Chenin Blanc



Third Course:

Spinach Salad

Spinach with gala apples, dried cranberries, red onion, blue cheese, and spiced pecans with a hot bacon dressing.

Paired with Venteux, 2018 Aglianico

Fourth Course:

Braised Short Ribs

48hr Braised Short ribs with smoked gouda polenta

Paired with 2019 McPrice Myers, Cuvee Kristina. Syrah

Fifth Course:

Mousse Cake

Triple Chocolate Mousse cake

with a raspberry coulis

Paired with 2019 Paix Sur Terre, Either side of the hill. Syrah
